Bhapa Doi is a traditional Bengali dessert known for its simplicity and rich, creamy texture. The name "Bhapa" means "steamed" in Bengali, and "Doi" refers to "yogurt." This dessert is made by blending thick yogurt with condensed milk and sugar, then steaming the mixture until it sets into a smooth, custard-like consistency. The process of steaming gives it a unique, delicate texture, different from regular baked desserts.
Bhapa Doi is often flavored with cardamom or saffron and garnished with chopped nuts like pistachios or almonds, adding a subtle fragrance and a crunchy contrast to the creamy base. It's typically served chilled, making it a refreshing treat, especially in warm climates.

Instructions:
Step 1:
Whisk the Ingredients: In a bowl, whisk together thick yogurt, condensed milk, and milk until smooth. Add cardamom powder and mix well.
Step 2:
Pour and Cover: Pour the mixture into a heatproof dish or small bowls. Cover the dish with foil to prevent water from entering during steaming.
Step 3:
Steam the Mixture: Place the covered dish in a steamer or a pot with some water at the bottom. Steam on medium heat for 25-30 minutes. Check doneness by inserting a toothpick—if it comes out clean, it's ready.
Step 4:
Cool and Refrigerate: Allow the Bhapa Doi to cool to room temperature, then refrigerate it for at least 2 hours to set.
Step 5:
Garnish and Serve: Before serving, garnish with chopped nuts like pistachios or almonds. Serve chilled.
Tips for Perfect Bhappa Doi:
Use Full-Fat Yogurt:
Full-fat or whole milk yogurt gives a richer and creamier texture. Avoid using low-fat yogurt as it can affect the creaminess.
Check the Sweetness:
Adjust the sweetness by adding more or less condensed milk according to your taste. Remember that the sweetness can also be adjusted after the dish is made if needed.
Consistency Check:
If the mixture seems too thick, you can add a bit of milk to adjust the consistency. It should be pourable but not too runny.
Avoid Over-Steaming:
